lukaszraczylo 14b61fa962 fix(docker): bump builder image to go 1.26 
go.mod requires go >= 1.26.0 since the dependency updates, and the
golang alpine images set GOTOOLCHAIN=local, so the 1.25 builder failed
at go mod download.
